Tell us about the history of your company: La Costa is a family business. Maria is the owner and all four of her kids work here and run the day to day operations. Alex is the general manager, Larissa is a manager and community liaison, Chelsie is our event coordinator, and Adriana is the office manager. We opened almost 25 years ago in a small building off of 21st street, our home for many years. About two and a half years ago we moved to the Ice House.

How has your business changed since it first opened? When we first opened, Maria worked with just a few employees. She spent from open ‘til close working. Many days spent with just a handful of people coming in to try our food. Today we have over 70 employees and our restaurant is three times the size of the original. Although the metrics have changed the vision has continued to stay the same.

How is the restaurant involved in the community? We are involved with the Kern County Hispanic Chamber of Commerce, hosting business mixers, helping with the Dia De Los Muertos event, partnering in donations with 50 plus organizations, churches, and schools, and donating food to different events and causes.

What are your future goals and how do you hope to achieve them? We hope to eventually open another location so people can continue to experience the tastes and ambiance of Puerto Vallarta. We will continue serving the freshest ingredients and maintaining a high level of quality of service and making people feel like they are part of our family.

What is your favorite thing about La Costa? Larissa: After working here for so many years it’s very special to see individuals that once came in as children, now bringing their own children and spouses. Chelsie: I grew up in this restaurant…literally, I was almost born in the restaurant (with minutes to spare). Many people shared many of my special moments as I showed my mom my latest ballet dances in the middle of the dining room or even took prom pictures. Now, I get to plan their special events as they celebrate birthdays, baby showers, weddings, and so much more. Adriana: The people who work here. When they come and work for us they are not just employees, they become members of our family. Maria: Working with my kids. It is wonderful to see how they are now making this their own, while carrying on my vision and heart for the people that come in to eat with us.
