Take one step inside of La Costa Mariscos and we suspect you will instantly fall in love. We know we did! The spacious, high-ceilinged building is a feast for the senses.
The walls are exposed brick and the tables are a rich, dark wood. Set with a very whimsical sea theme, you will see fun decor everywhere you look—everything from starfish caught in nets to life-sized Dia de los Muertos-style skeletons donning purple skirts. The dark background contrasted with bright splashes of color make for a harmonious and fun atmosphere.
The bar, itself, is marvelous: all wood, towering high with shelves of bottles, and topped with a stained glass window. If you happen to see bartender Nelly Sanchez there, you are in for a special treat. She has been with the business since it opened, and has created some of their most popular drinks. Yes, this is a fantastic place for having a few cocktails, and Sanchez even intimated just how much so, “We don’t have a Taco Tuesday here,” she smiled. “We have a Tequila Tuesday.” As if that weren’t enough, they also make all of their drink ingredients from scratch, including their own sweet and sour. “The flavors are very unique because everything is made fresh,” she assured.
One thing that sets their drinks apart from other places in town is the fact that you can upgrade from a regular-sized drink to a fish bowl, aka a 60-ounce glass! Think of it as a new way of bonding with friends and family, because these bowls come with a few jumbo straws. And you really won’t feel short on options, either. Sanchez is a bit of a ninja at the bar, and she was able to concoct an original cocktail she dubbed Coconut Sand during the time of the interview, in addition to the one we are featuring.
We decided to follow La Costa Mariscos’ lead and went big for this Libations. Sanchez shared one of their best selling drinks, Starfish Malibu, and gave us the portions of a recipe fit for a…well, a fish bowl. It’s hard to imagine it any other way, with the abundance of sweet blackberries that make up for a good portion of the flavor. It blends smoothly into the tart lemonade and crisp Sprite flavors without the least bit of a detectable bite.
Bring a friend (or three!) and have fun taking in this truly delicious drink!
- 2 oz. Malibu Rum
- 2 oz. Vodka
- 1 oz. Peach Schnapps
- 1 oz Orange Liqueur
- Raspberry Puree
Using a cocktail shaker, fill halfway with ice and add about six blackberries. Pour in Malibu Rum and vodka and muddle. Cover with lid and shake till mixed well. Top off with the orange liqueur and peach schnapps. Add a small amount (a few tablespoons) of raspberry puree and shake. Fill a 60-ounce glass (or the biggest glass you have at home) three-quarters of the way with ice. Add combined ingredients to the glass. Top off with equal parts lemonade and Sprite. Top with additional blackberries; a skewer with a strawberry, orange slice, and pineapple wedge; grab a straw and indulge!
